The Best Bananah Zuccuhini Muffins You & Your Kids Will LOVE!!

Hey loves so I am sharing our favorite banana muffins that I have altered. So first off we added zucchini just to add extra vegetable for the kids to eat. I don’t know about you but i have a REALLY hard time getting my kids to eat veggies 🙁 My kids LOVE these muffins so if i can sneak them in any recipe i will! I ALWAYS double this recipe because we always eat the whole batch the first day or 2 if I don’t! I don’t know about you guys but I love easy foods that I can give to the kids to eat. These are so perfect for snacks and your kids will LOVE them.

So I got this recipe from my sister in law then I altered it a little. First off I swap out the butter for coconut oil and then I add in zucchini as well. You can also substitute the flour for wheat flour or almond flour and that is really good too! I love using coconut oil muffins because it makes them so much moister. So below I will put the recipe for you and hope you guys enjoy them as much as we do.

3 Large brownish bananas

3/4 C white sugar
1 egg
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp sale
1/3 C. Melted Coconut Oil
1 zucchini
1 1/2 C. flour
Mash bananas
Then mix in all first 6 ingredients (eggs, bananas, sugar, baking soda, baking powder and salt)
Then melt your coconut oil and whisk that into mixture
Then mix in flour and then add the zucchini
Bake at 375 for about 15-20 min in regular muffin tins. We use small mini muffin tins so they are perfect for the kids and i bake those about 11 mins.
You can sub out flour for wheat flour or almond flour and they still taste really good if you want them even healthier!
